If you live somewhere with elderflower trees, making your own elderflower cordial is SO worth it. It tastes much much better than storebought, fresher and more open, with a floral aftertaste. And it's not even hard to make at all! My main advice is don't be too finicky about getting rid of all the bugs, it's more important to make sure all the pollen stays in there. Just get rid of the big bugs and the small ones you can get rid of when you strain it. Also, this freezes well, so I usually just keep 500ml out at a time and freeze the rest. It's very good as a cordial obviously but also in baking (think cakes and puddings), and in cocktails and mixers, e.g. with gin and tonic and lemon.
