I was considering just giving this one effort, but it is a bit fiddly getting everything together and then rolling them up. However, I think it's worth it. I usually make this and then eat it for lunch over a few days. Once you've made the dipping sauce and cut everything up the first day assembling them for the next few days is really quick and easy (I use frozen prawns and just boil them fresh in water each day). Really delicious in summer!
