It is INSANE how easy it is to make lemon curd in the instant pot, this recipe really works! Use it in cakes and cupcakes. You'll likely end up with more than you need for a single cake/batch of cupcakes but it freezes perfectly so you can always save the leftovers for later. I usually add more lemon zest than in the recipe. Just taste test it when it comes out of the instant pot and add more zest to taste.
