Nothing better for a lazy Sunday breakfast, this recipe is perfected for maximum simplicity. The collage showcases some of my favourite toppings: strawberries and condensed milk, nutella banana, salted butter and sugar, lemon and sugar.

Ingredients
For two (=about 3 crepes each)
- 1/2 cup flour
- 1 cup milk
- 1 egg
- 1 tsp vanilla essence
- butter (for cooking)
- plus toppings (see above)
Method
- Put flour, milk, egg in a bowl and whisk with an electric mixer until incorporated.
- Stir through vanilla extract with a ladle, try also to pop as many bubbles as you can while stirring (but don't worry too much, any bubbles that form when you make the crepe usually deflate when you transfer it to the plate).
- Melt some butter in the pan, then add a small ladle-full of crepe batter, immediately swirling it to distribute it thinly across the pan.
- Wait for the bottom side to cook, you should see smoke coming out and hear it screaming, then flip (if you have a crepe pan, if you don't have a crepe pan use a spatula to flip it).
- Cook on the other side and repeat with the next crepe, buttering the pan in between as needed.
